Ingredients

  • 1 cup cooked black beans
  • 1 cup cooked corn kernels
  • 1 medium-sized avocado, diced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped red onion
  • Juice of 1 lime
  • 1 teaspoon cumin powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small tortillas (or lettuce wraps for a low-carb option)

Instructions

  1. In a large bowl, combine the black beans, corn, avocado, tomatoes, cilantro, red onion, lime juice, cumin powder, chili powder, garlic powder, paprika, salt, and pepper. Mix well to combine all the flavors.

  2. Warm the tortillas in a skillet or over an open flame until soft and pliable.

  3. Spoon the filling onto each tortilla and fold in half. Serve with your favorite toppings such as salsa, vegan sour cream, or guacamole.
