How To Make Vegan Mushroom Gravy

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 8 ounces mushrooms, sliced
- 2 tablespoons all-purpose flour
- 2 cups vegetable broth
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions

Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.

Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 8 minutes.

Sprinkle the flour over the mushrooms and onions and stir to coat everything evenly.

Slowly pour in the vegetable broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 5 minutes, until the gravy thickens.

Stir in the soy sauce, dried thyme, salt, and pepper. Taste and adjust seasonings as needed.
