Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic and cook until softened, about 5 minutes.

  2. Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 8 minutes.

  3. Sprinkle the flour over the mushrooms and onions and stir to coat everything evenly.

  4. Slowly pour in the vegetable broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook for 5 minutes, until the gravy thickens.

  5. Stir in the soy sauce, dried thyme, salt, and pepper. Taste and adjust seasonings as needed.

  6. Serve the vegan mushroom gravy hot over mashed potatoes or roasted vegetables.
