How To Make Vegan Mayonnaise

Ingredients
- 1 cup of unsweetened soy milk
- 1 1/2 cups of neutral-flavored oil (such as canola or sunflower oil)
- 2 tablespoons of lemon juice
- 1 tablespoon of white vinegar
- 1/2 teaspoon of dijon mustard
- 1/2 teaspoon of salt
- 1/4 teaspoon of garlic powder
Instructions

In a blender or food processor, combine the soy milk, lemon juice, vinegar, mustard, salt, and garlic powder.

With the blender or food processor running on low, slowly drizzle in the oil.

Continue blending until the mixture thickens and emulsifies, similar to the consistency of mayonnaise.

Taste and adjust the seasonings if needed.

Transfer the vegan mayo to a jar or container and refrigerate for at least 30 minutes before using.
