How To Make Vegan Potato Salad

Ingredients
- 4 large potatoes, peeled and diced
- 1/2 cup diced red onion
- 1/2 cup diced celery
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/4 cup vegan mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions

Boil the diced potatoes in a large pot of salted water until tender, about 10-15 minutes. Drain and let cool.

In a mixing bowl, combine the cooled potatoes, red onion, celery, parsley, and dill.

In a separate bowl, whisk together the vegan mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.

Pour the dressing over the potato mixture and gently toss until well coated.

Refrigerate for at least 1 hour to allow the flavors to meld together.
