How To Make Tortilla Tapas

Ingredients
- 4 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped fresh parsley
- 1/4 cup shredded cheddar cheese
Instructions

In a bowl, whisk together the eggs, salt, and black pepper. Set aside.

Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper, and cook until softened, about 5 minutes.

Add the cherry tomatoes and cook for another 2 minutes.

Pour the egg mixture into the skillet and stir gently to combine with the vegetables.

Cook for 5-7 minutes, until the edges are set and the center is still slightly runny.

Flip the tortilla carefully, either using a plate or by sliding it onto a baking sheet and flipping it onto the skillet.

Cook for another 5 minutes until the second side is set.

Sprinkle the top with shredded cheddar cheese and chopped parsley.

Allow to cool slightly before cutting into small squares or wedges.

Serve as tapas with toothpicks for easy eating.
