How To Make Red Cabbage, Cauliflower & Coconut Dhal

Ingredients
- 1 small head of red cabbage, shredded
- 1 small head of cauliflower, cut into florets
- 1 cup red lentils
- 1 can of coconut milk (400ml)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp chili powder
- Salt, to taste
- Fresh cilantro, for garnish
- Cooked rice or naan, for serving
Instructions

In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the spices (turmeric, cumin, coriander, chili powder) and cook for another minute.

Add the shredded red cabbage and cauliflower florets, and cook for 5 minutes until slightly softened.

Rinse the red lentils under cold water, then add them to the pot along with the coconut milk.

Season with salt and bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes until the lentils are cooked and the vegetables are tender.

Serve the dhal over cooked rice or with naan bread, and garnish with fresh cilantro.
