How To Make One-pan Coconut Dhal

Ingredients
- 1 cup red lentils
- 1 can coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp chili powder
- 1 tsp salt
- 2 cups water
- Fresh cilantro, for garnish
- Cooked rice or naan, for serving
Instructions

In a large pan, heat some oil over medium heat. Add the chopped onions, minced garlic, and grated ginger. Sauté until the onions turn translucent.

Add the turmeric powder, cumin powder, chili powder, and salt to the pan. Stir well to combine and cook for an additional minute.

Add the red lentils to the pan and give it a good stir. Pour in the coconut milk and water, and bring it to a boil.

Reduce the heat to low, cover the pan, and let it simmer for about 30 minutes or until the lentils are cooked and the mixture has thickened.

Give the dhal a stir and adjust the seasoning if needed. If the dhal is too thick, you can add more water to thin it out.

Serve the one-pan coconut dhal over cooked rice or with naan bread. Garnish with fresh cilantro.
