Ingredients

  • 8 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked chicken breast, diced
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup crumbled blue cheese
  • 1 avocado, diced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • dressing:
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, diced chicken, crumbled bacon, blue cheese, diced avocado, green onions, and fresh parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well combined.

  3. Pour the dressing over the salad and toss gently to coat all the ingredients.

  4. Serve immediately and enjoy!
