How To Make Spring Greens Spanakopita

Ingredients
- 8 sheets of phyllo pastry
- 1/4 cup olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups of spring greens, chopped
- 1 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a large pan, heat olive oil over medium heat. Add onions and garlic, and cook until softened.

Add the spring greens to the pan and cook until wilted. Remove from heat and let cool.

In a separate bowl, combine the cooled greens with feta cheese. Season with salt and pepper.

Lay one sheet of phyllo pastry on a baking sheet, brush with olive oil, and layer another sheet on top. Repeat with remaining sheets.

Spoon the greens and feta mixture onto the phyllo pastry, leaving a border around the edges.

Fold the edges of the phyllo pastry over the filling, creating a rectangular shape.

Brush the top of the spanakopita with olive oil.

Bake in the preheated oven for 30-40 minutes, or until the phyllo pastry is golden and crisp.

Allow to cool slightly before serving.
