Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 2 medium potatoes, diced
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 4 oaty thins, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until onions are translucent.

  2. Add the sliced mushrooms to the skillet and cook for about 5 minutes, until they release their moisture and start to brown.

  3. Add the diced potatoes, smoked paprika, salt, and pepper to the skillet. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are crispy and cooked through.

  4. While the hash is cooking, prepare the oaty thins according to package instructions.

  5. Serve the smoky mushroom and potato hash with the oaty thins on the side.
