How To Make Couscous Salad

Ingredients
- 1 cup couscous
- 1 ¼ cups vegetable broth
- 1 tablespoon olive oil
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ red bell pepper, diced
- ½ yellow bell pepper, diced
- ¼ red onion, diced
- ¼ cup chopped fresh parsley
- 2 tablespoons lemon juice
- salt and pepper to taste
Instructions

In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes or until all the liquid is absorbed. Fluff the couscous with a fork.

In a large bowl, combine the cooked couscous, cucumber, cherry tomatoes, bell peppers, red onion, and parsley. Toss well to mix.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the couscous salad and toss to coat all the ingredients.

Serve chilled or at room temperature.
