Ingredients

  • 4 stone fruits (such as peaches, plums, or nectarines), halved and pitted
  • 2 tablespoons honey
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the halved and pitted stone fruits in a baking dish.

  3. In a small bowl, mix together the honey, melted butter, vanilla extract, and ground cinnamon.

  4. Drizzle the honey mixture over the stone fruits, making sure they are well coated.

  5. Roast the stone fruits in the preheated oven for about 20 minutes, or until they are tender and caramelized.

  6. Remove from the oven and let cool for a few minutes before serving.

  7. Serve the roasted stone fruits on their own or with a dollop of whipped cream or a scoop of vanilla ice cream.
