How To Make Little Buttermilk Cheesecakes with Honey Roast Summer Fruits

Ingredients
- 250g cream cheese
- 1/2 cup sugar
- 1/2 cup buttermilk
- 2 eggs
- 1 tsp vanilla extract
- 1 cup summer fruits (such as berries and stone fruits)
- 2 tbsp honey
- 1 tbsp lemon juice
- 1/4 cup crushed graham crackers (optional, for serving)
Instructions

Preheat the oven to 325°F (160°C).

In a mixing bowl, beat the cream cheese and sugar until smooth.

Add the buttermilk, eggs, and vanilla extract. Mix well.

Divide the mixture evenly into 4 ramekins or small baking dishes.

Bake for 20-25 minutes, or until the cheesecakes are set.

While the cheesecakes are baking, toss the summer fruits with honey and lemon juice.

Spread the honey-roasted fruits on a baking sheet and roast for 10 minutes at 375°F (190°C).

Remove the cheesecakes from the oven and let them cool.
