Ingredients

  • 250g cream cheese
  • 1/2 cup sugar
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup summer fruits (such as berries and stone fruits)
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1/4 cup crushed graham crackers (optional, for serving)

Instructions

  1. Preheat the oven to 325°F (160°C).

  2. In a mixing bowl, beat the cream cheese and sugar until smooth.

  3. Add the buttermilk, eggs, and vanilla extract. Mix well.

  4. Divide the mixture evenly into 4 ramekins or small baking dishes.

  5. Bake for 20-25 minutes, or until the cheesecakes are set.

  6. While the cheesecakes are baking, toss the summer fruits with honey and lemon juice.

  7. Spread the honey-roasted fruits on a baking sheet and roast for 10 minutes at 375°F (190°C).

  8. Remove the cheesecakes from the oven and let them cool.

  9. Top each cheesecake with the honey-roasted summer fruits.

  10. Serve the cheesecakes chilled, optionally sprinkled with crushed graham crackers.
