Ingredients

  • 1 sheet of puff pastry
  • 200g goat’s cheese
  • 500g new potatoes, thinly sliced
  • 1 red onion, thinly sliced
  • 2 sprigs of fresh thyme
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Roll out the puff pastry sheet and place it on a baking tray.

  3. Crumble the goat’s cheese evenly over the pastry.

  4. Arrange the sliced new potatoes and red onion on top of the cheese.

  5. Sprinkle with fresh thyme leaves, salt, and pepper.

  6. Drizzle with olive oil.

  7. Bake in the preheated oven for 40 minutes, or until the pastry is golden and the potatoes are tender.

  8. Serve hot or cold.
