Ingredients

  • 1 sheet of puff pastry
  • 150g of goat’s cheese
  • 2 red peppers, roasted and sliced
  • 2 eggs
  • 1/4 cup of milk
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Roll out the puff pastry and fit it into a tart tin.

  3. Crumble the goat’s cheese over the pastry.

  4. Arrange the roasted red pepper slices on top of the cheese.

  5. In a bowl, whisk together the eggs, milk, salt, and pepper.

  6. Pour the egg mixture over the peppers and cheese.

  7. Bake the tart in the preheated oven for 25-30 minutes, or until the pastry is golden and the filling is set.

  8. Remove from the oven and let it cool slightly before slicing.

  9. Garnish with fresh basil leaves before serving.
