Ingredients

  • 4 medium-sized potatoes, boiled and diced
  • 2 ripe avocados, peeled and diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced potatoes, avocados, red onion, cilantro, and jalapeno pepper.

  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

  3. Pour the dressing over the potato and avocado mixture, and gently toss until well coated.

  4. Serve chilled and enjoy!
