Ingredients

  • 2 ripe avocados, diced
  • 1 cup shredded purple cabbage
  • 1/2 cup pomegranate seeds
  • 1/2 cup chopped walnuts
  • 1/4 cup chopped cilantro
  • juice of 1 lime
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced avocados, shredded purple cabbage, pomegranate seeds and chopped walnuts.

  2. In a small bowl, whisk together the lime juice, olive oil, salt and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Top with chopped cilantro and serve.
