How To Make Oven-roasted sweet potato & courgette tortilla

Ingredients
- 2 medium sweet potatoes, peeled and diced
- 2 medium courgettes, sliced
- 1 red onion, thinly sliced
- 4 tbsp olive oil
- 1 tsp paprika
- Salt and pepper, to taste
- 6 eggs, beaten
- Fresh parsley, for garnish
Instructions

Preheat the oven to 200°C (400°F).

Place the sweet potatoes, courgettes, and red onion on a baking tray. Drizzle with olive oil, sprinkle with paprika, salt, and pepper. Toss to coat evenly.

Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.

In a large bowl, whisk the eggs. Season with salt and pepper.

Add the roasted vegetables to the beaten eggs and mix well.

Heat a non-stick frying pan over medium heat and add a tablespoon of olive oil.

Pour the egg and vegetable mixture into the pan and cook for 8-10 minutes, or until the edges are set and the center is slightly wobbly.

Place the pan under the grill for 3-4 minutes, or until the top is golden and set.

Remove from the oven and let it cool slightly.

Garnish with fresh parsley and serve warm or at room temperature.
