Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 2 medium courgettes, sliced
  • 1 red onion, thinly sliced
  • 4 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 6 eggs, beaten
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Place the sweet potatoes, courgettes, and red onion on a baking tray. Drizzle with olive oil, sprinkle with paprika, salt, and pepper. Toss to coat evenly.

  3. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.

  4. In a large bowl, whisk the eggs. Season with salt and pepper.

  5. Add the roasted vegetables to the beaten eggs and mix well.

  6. Heat a non-stick frying pan over medium heat and add a tablespoon of olive oil.

  7. Pour the egg and vegetable mixture into the pan and cook for 8-10 minutes, or until the edges are set and the center is slightly wobbly.

  8. Place the pan under the grill for 3-4 minutes, or until the top is golden and set.

  9. Remove from the oven and let it cool slightly.

  10. Garnish with fresh parsley and serve warm or at room temperature.
