How To Make No-cook Veggie Fajitas

- 4 large tortillas
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/4 cup cilantro leaves
- Juice of 1 lime
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
Instructions

In a large bowl, combine the sliced bell peppers, red onion, cherry tomatoes, avocado, cilantro, lime juice, olive oil, cumin, chili powder, salt, and pepper. Mix well to coat all the veggies evenly.

Warm the tortillas in a dry skillet or microwave for a few seconds.

Spoon the veggie filling onto the tortillas and roll them up tightly.

Serve the veggie fajitas with your favorite salsa or guacamole on the side.
