Ingredients

  • 2 bell peppers, thinly sliced
  • 1 red onion, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 yellow squash, thinly sliced
  • 1 cup button mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 8 small flour tortillas
  • Optional toppings: avocado, salsa, sour cream, cilantro

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.

  2. Add bell peppers, onion, zucchini, yellow squash, and mushrooms to the skillet. Cook for 8-10 minutes, or until vegetables are tender.

  3. In a small bowl, mix together chili powder, cumin, smoked paprika, salt, and pepper. Sprinkle the seasoning mixture over the vegetables and stir well to coat.

  4. Cook for an additional 2-3 minutes, until the vegetables are fully coated and heated through.

  5. Warm the flour tortillas in a separate skillet or in the oven.

  6. Serve the veggie mixture in warm tortillas and top with desired toppings such as avocado, salsa, sour cream, and cilantro.
