Ingredients
- 2 bell peppers, thinly sliced
- 1 red onion, thinly sliced
- 1 zucchini, thinly sliced
- 1 yellow squash, thinly sliced
- 1 cup button mushrooms, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 8 small flour tortillas
- Optional toppings: avocado, salsa, sour cream, cilantro
Instructions

In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.

Add bell peppers, onion, zucchini, yellow squash, and mushrooms to the skillet. Cook for 8-10 minutes, or until vegetables are tender.

In a small bowl, mix together chili powder, cumin, smoked paprika, salt, and pepper. Sprinkle the seasoning mixture over the vegetables and stir well to coat.

Cook for an additional 2-3 minutes, until the vegetables are fully coated and heated through.

Warm the flour tortillas in a separate skillet or in the oven.
