Ingredients

  • 1 small butternut squash, peeled and diced
  • 4 cups of cabbage, thinly sliced
  • 4 green onions, chopped
  • 4 tablespoons of butter
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of milk

Instructions

  1. Place the diced squash in a microwave-safe dish and microwave on high for 6-8 minutes, or until tender.

  2. In a large microwave-safe bowl, combine the cabbage, green onions, butter, salt, and black pepper. Microwave on high for 4-6 minutes, or until the cabbage is wilted.

  3. Mash the cooked squash and add it to the bowl with the cabbage mixture. Stir in the milk until well combined.

  4. Microwave for an additional 2-3 minutes, or until heated through.

  5. Serve hot as a side dish.
