- 2 cups mashed potatoes
- 1 cup chopped kale
- 4 slices cooked bacon, crumbled
- 1/4 cup shredded cheddar cheese
- Salt and pepper
- 1/4 cup flour
- 1 egg, beaten
- 1 cup breadcrumbs
- Oil for frying
Instructions

Preheat the oven to 350°F.

Mix together the mashed potatoes, kale, bacon, cheese, salt, and pepper.

Roll mixture into 1-inch balls.

Dredge balls in flour, then dip in the beaten egg, and coat in breadcrumbs.
