How To Make Lime & Coconut Dhal

Ingredients
- 1 cup red lentils
- 2 cups water
- 1 can (14 oz) coconut milk
- Juice of 2 limes
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp chili powder
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Rinse the lentils under cold water until the water runs clear.

In a large pot, combine the lentils, water, coconut milk, lime juice, onion, garlic, turmeric, cumin, coriander, and chili powder.

Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the lentils are cooked and tender.

Season with salt to taste.

Serve hot, garnished with fresh cilantro.
