Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 can (14 oz) coconut milk
  • Juice of 2 limes
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp chili powder
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the lentils under cold water until the water runs clear.

  2. In a large pot, combine the lentils, water, coconut milk, lime juice, onion, garlic, turmeric, cumin, coriander, and chili powder.

  3. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the lentils are cooked and tender.

  4. Season with salt to taste.

  5. Serve hot, garnished with fresh cilantro.
