How To Make Lightly Spiced Carrot Soup

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp ground ginger
- 4 large carrots, peeled and chopped
- 4 cups vegetable broth
- Salt and pepper to taste
- 1/4 cup heavy cream
- Fresh cilantro, for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they become fragrant and translucent.

Add the cumin, coriander, and ginger to the pot, and cook for another minute to toast the spices.

Add the chopped carrots and vegetable broth to the pot. Bring to a boil and then reduce the heat to simmer. Cook until the carrots are tender, about 20 minutes.

Using an immersion blender or a regular blender, puree the soup until smooth and creamy. Season with salt and pepper to taste.

Stir in the heavy cream, and warm the soup over low heat for a few more minutes.

Serve the soup hot, garnished with fresh cilantro.
