How To Make Aubergine, Halloumi & Harissa Skillet Bake

Ingredients
- 2 medium aubergines, sliced
- 250g halloumi cheese, cut into cubes
- 2 tbsp olive oil
- 2 tbsp harissa paste
- 2 cloves of garlic, minced
- 1 tsp paprika
- Salt and black pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat the oven to 200°C (400°F).

In a large skillet, heat the olive oil over medium heat. Add the sliced aubergines and cook for 5-7 minutes until lightly browned.

Remove the aubergines from the skillet and set aside.

In the same skillet, add the halloumi cheese cubes and cook for 2-3 minutes until golden brown.

Remove the halloumi from the skillet and set aside.

In a small bowl, mix together the harissa paste, minced garlic, paprika, salt, and black pepper.

Place the aubergine slices back into the skillet and top with the cooked halloumi cubes.

Drizzle the harissa mixture over the aubergines and halloumi, making sure everything is evenly coated.

Transfer the skillet to the preheated oven and bake for 20-25 minutes until the aubergines are tender and the cheese is melted.

Remove from the oven and garnish with fresh parsley.
