Ingredients

  • 1.5 kg pork belly, rolled and tied
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 160°C (320°F).

  2. Score the skin of the pork belly with a sharp knife, making diagonal cuts.

  3. In a small bowl, mix together salt, black pepper, garlic powder, dried thyme, and paprika.

  4. Rub the spice mixture all over the pork belly, including the skin.

  5. Heat olive oil in a large oven-safe skillet or roasting pan over medium-high heat.

  6. Place the pork belly in the pan, fat side down, and sear for 5 minutes until the skin is golden brown.

  7. Flip the pork belly and sear on the other side for 5 minutes.

  8. Transfer the pan to the preheated oven and roast for 2.5 hours.

  9. Increase the oven temperature to 220°C (430°F) and roast for an additional 30 minutes to crisp up the skin.

  10. Remove from the oven and let the pork rest for 10 minutes before slicing.

  11. Serve the slow-roast rolled pork belly with desired sides or sauces.
