How To Make Slow-roast Rolled Pork Belly

Ingredients
- 1.5 kg pork belly, rolled and tied
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp paprika
- 2 tbsp olive oil
Instructions

Preheat the oven to 160°C (320°F).

Score the skin of the pork belly with a sharp knife, making diagonal cuts.

In a small bowl, mix together salt, black pepper, garlic powder, dried thyme, and paprika.

Rub the spice mixture all over the pork belly, including the skin.

Heat olive oil in a large oven-safe skillet or roasting pan over medium-high heat.

Place the pork belly in the pan, fat side down, and sear for 5 minutes until the skin is golden brown.

Flip the pork belly and sear on the other side for 5 minutes.

Transfer the pan to the preheated oven and roast for 2.5 hours.

Increase the oven temperature to 220°C (430°F) and roast for an additional 30 minutes to crisp up the skin.

Remove from the oven and let the pork rest for 10 minutes before slicing.
