Ingredients

  • 8 Little Gem lettuce leaves
  • 200g prawns, cooked and peeled
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 small red chili, deseeded and finely chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. In a bowl, combine the prawns, diced mango, red onion, red chili, lime juice, salt, and pepper to make the salsa.

  2. Place the Little Gem lettuce leaves on a serving platter.

  3. Spoon the prawn and mango salsa into the lettuce cups.

  4. Serve immediately and enjoy!
