How To Make Lobster, green bean & radicchio salad

Ingredients
- 2 lobster tails
- 1 pound green beans, trimmed
- 1 small head of radicchio, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

Boil a pot of salted water. Add the lobster tails and cook for 8-10 minutes, until the shells turn red and the meat is opaque. Remove and let cool.

Steam the green beans for 3-4 minutes, until tender-crisp. Plunge into ice water to stop cooking, then drain.

In a large bowl, whisk together the olive oil, lemon juice, mustard, salt, and pepper to make the vinaigrette.

Remove the lobster meat from the shells and slice into bite-sized pieces.

Add the lobster, green beans, and radicchio to the bowl with the vinaigrette. Toss well to coat.

Serve the salad immediately, garnished with additional lemon wedges if desired.
