Ingredients

  • 2 lobster tails
  • 1 pound green beans, trimmed
  • 1 small head of radicchio, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil a pot of salted water. Add the lobster tails and cook for 8-10 minutes, until the shells turn red and the meat is opaque. Remove and let cool.

  2. Steam the green beans for 3-4 minutes, until tender-crisp. Plunge into ice water to stop cooking, then drain.

  3. In a large bowl, whisk together the olive oil, lemon juice, mustard, salt, and pepper to make the vinaigrette.

  4. Remove the lobster meat from the shells and slice into bite-sized pieces.

  5. Add the lobster, green beans, and radicchio to the bowl with the vinaigrette. Toss well to coat.

  6. Serve the salad immediately, garnished with additional lemon wedges if desired.
