Ingredients

  • 1 pound gnocchi
  • 1 cup fresh chives, chopped
  • 2 lemons, zested and juiced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup extra virgin olive oil
  • Salt and black pepper, to taste

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.

  2. In a food processor, combine the chives, lemon zest, lemon juice, Parmesan cheese, and olive oil. Process until smooth.

  3. Season the pesto with salt and black pepper to taste.

  4. In a large skillet, heat the pesto over medium heat. Add the cooked gnocchi and toss to coat evenly.

  5. Cook for an additional 2-3 minutes, until heated through.

  6. Serve the gnocchi with a sprinkle of grated Parmesan cheese and fresh chives on top.
