How To Make Gnocchi with Lemon & Chive Pesto

Ingredients
- 1 pound gnocchi
- 1 cup fresh chives, chopped
- 2 lemons, zested and juiced
- 1/2 cup grated Parmesan cheese
- 1/4 cup extra virgin olive oil
- Salt and black pepper, to taste
Instructions

Cook the gnocchi according to package instructions. Drain and set aside.

In a food processor, combine the chives, lemon zest, lemon juice, Parmesan cheese, and olive oil. Process until smooth.

Season the pesto with salt and black pepper to taste.

In a large skillet, heat the pesto over medium heat. Add the cooked gnocchi and toss to coat evenly.

Cook for an additional 2-3 minutes, until heated through.

Serve the gnocchi with a sprinkle of grated Parmesan cheese and fresh chives on top.
