How To Make Giant Couscous & Tomato Salad with Zhoug-Style Dressing

Ingredients
- 1 cup giant couscous
- 2 cups cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh parsley leaves
- 1/4 cup chopped cilantro
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 jalapeno, seeded and minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- Juice of 1 lemon
Instructions

Cook the giant couscous according to the package instructions. Drain and set aside to cool.

In a large bowl, combine the cooked couscous, cherry tomatoes, red onion, mint leaves, parsley leaves, and cilantro.

In a small bowl, whisk together the olive oil, minced garlic, minced jalapeno, ground cumin, ground coriander, salt, and lemon juice to make the zhoug-style dressing.

Pour the dressing over the couscous mixture and toss well to combine. Adjust seasoning if needed.

Serve the salad chilled or at room temperature.
