Ingredients

  • 1 cup giant couscous
  • 2 cups cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh parsley leaves
  • 1/4 cup chopped cilantro
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • Juice of 1 lemon

Instructions

  1. Cook the giant couscous according to the package instructions. Drain and set aside to cool.

  2. In a large bowl, combine the cooked couscous, cherry tomatoes, red onion, mint leaves, parsley leaves, and cilantro.

  3. In a small bowl, whisk together the olive oil, minced garlic, minced jalapeno, ground cumin, ground coriander, salt, and lemon juice to make the zhoug-style dressing.

  4. Pour the dressing over the couscous mixture and toss well to combine. Adjust seasoning if needed.

  5. Serve the salad chilled or at room temperature.
