How To Make Tomato & Mozzarella Couscous Salad

Ingredients
- 1 cup of couscous
- 1 ¼ cups of vegetable broth
- 2 large tomatoes, diced
- 1 cup of fresh mozzarella, cubed
- ¼ cup of fresh basil, chopped
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions

In a medium saucepan, bring vegetable broth to a boil. Remove from heat and stir in couscous. Cover and let it sit for 5 minutes. Fluff with a fork.

In a large bowl, combine cooked couscous, diced tomatoes, mozzarella cubes, and chopped fresh basil.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour the dressing over the couscous mixture and toss gently to combine.

Serve immediately or refrigerate until ready to serve.
