How To Make Finbar’s Veggie Spag Bol

Ingredients
- 8 oz spaghetti
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 8 oz mushrooms, sliced
- 1 can (14 oz) crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
- Freshly chopped basil, for garnish
Instructions

Cook the spaghetti according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.

Add the carrot, bell pepper, zucchini, and mushrooms to the skillet. Cook until the vegetables are tender, about 8-10 minutes.

Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 10 minutes to let the flavors meld together.

Serve the veggie sauce over the cooked spaghetti. Top with grated Parmesan cheese and freshly chopped basil.
