Ingredients

  • 1 kg tomatoes, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 cups vegetable broth
  • Fresh basil leaves, for garnishing

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.

  2. Add chopped tomatoes, dried basil, dried oregano, salt, and pepper. Cook for about 5 minutes, until tomatoes start to soften.

  3. Pour in vegetable broth and bring to a boil. Reduce heat and let it simmer for 20 minutes.

  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.

  5. Return the soup to the pot and heat over low heat for another 5 minutes.

  6. Serve hot, garnished with fresh basil leaves.
