How To Make Essence of Tomatoes Soup

Ingredients
- 1 kg tomatoes, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 cups vegetable broth
- Fresh basil leaves, for garnishing
Instructions

Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent.

Add chopped tomatoes, dried basil, dried oregano, salt, and pepper. Cook for about 5 minutes, until tomatoes start to soften.

Pour in vegetable broth and bring to a boil. Reduce heat and let it simmer for 20 minutes.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and heat over low heat for another 5 minutes.

Serve hot, garnished with fresh basil leaves.
