How To Make dish name Veggie Tahini Lentils

Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Cook the lentils according to package instructions. Drain and set aside.

In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

Add the diced carrot, bell pepper, and zucchini to the pan. Cook for another 5 minutes, until the vegetables are slightly tender.

In a small bowl, mix together the tahini, lemon juice, ground cumin, paprika, salt, and pepper. Add this mixture to the pan with the cooked vegetables.

Stir in the cooked lentils and cook for an additional 5 minutes, allowing the flavors to blend together.

Serve the veggie tahini lentils hot, garnished with fresh parsley.
