Ingredients

  • 2 cups canned chickpeas, drained and rinsed
  • 4 slices bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin powder
  • 1/2 tsp paprika
  • 1/4 tsp chili flakes (optional)
  • 4 cups fresh spinach leaves
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a large skillet over medium heat and cook the bacon until crispy. Remove bacon from skillet and set aside, leaving the rendered fat in the skillet.

  2. Add the diced onions to the skillet and cook until translucent, about 5 minutes. Add minced garlic and cook for another minute.

  3. Add cumin powder, paprika, and chili flakes (if using), stirring well to coat the onions and garlic.

  4. Add the chickpeas to the skillet and stir to combine with the spices. Cook for 5 minutes, allowing the flavors to meld together.

  5. Add the spinach leaves to the skillet, stirring until wilted.

  6. Season with salt and pepper to taste. Cook for another 2-3 minutes until the chickpeas are heated through and spinach is tender.

  7. Sprinkle the reserved crispy bacon bits over the top before serving.

  8. Serve hot as a main dish or as a side.
