Ingredients

  • 16 large prawns, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste
  • 4 slices crusty baguette, toasted
  • Fresh basil leaves, for garnish

Instructions

  1. In a bowl, combine prawns, cherry tomatoes, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Toss to coat evenly.

  2. Heat a grill or grill pan over medium-high heat. Thread the prawns onto skewers.

  3. Grill the prawn skewers for 2-3 minutes on each side, until they turn pink and are cooked through.

  4. Remove the prawns from the skewers and set aside.

  5. Arrange the toasted baguette slices on a serving platter. Top each slice with a grilled prawn and cherry tomato mixture.

  6. Garnish with fresh basil leaves and serve immediately.
