Ingredients

  • 500g frozen squash, defrosted and drained
  • 150g mixed nuts, chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 100g breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large bowl, mix together the defrosted squash, chopped nuts, onion, garlic, dried thyme, dried rosemary, soy sauce, olive oil, breadcrumbs, salt, and pepper.

  3. Spoon the mixture into a greased loaf tin and smooth the top.

  4. Bake in the preheated oven for 1 hour 30 minutes, or until the top is golden and firm to the touch.

  5. Remove from the oven and allow to cool for a few minutes before slicing and serving.
