How To Make Fruit & Nut Butternut Squash Quinoa

Ingredients
- 1 butternut squash, peeled and diced
- 1 cup quinoa
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, combine the diced butternut squash, olive oil, maple syrup, ground cinnamon, and salt and pepper. Toss to coat the squash evenly.

Spread the squash in an even layer on a baking sheet and roast for 25-30 minutes, or until tender and slightly golden.

While the squash is roasting, cook the quinoa according to the package instructions.

In a large mixing bowl, combine the roasted squash, cooked quinoa, dried cranberries, chopped walnuts, and chopped parsley. Mix well.

Season with additional salt and pepper if desired.
