Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 jalapeno pepper, seeded and minced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Rinse the quinoa thoroughly under cold water.

  2. In a medium saucepan, bring the water to a boil.

  3. Add the quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, or until all the water is absorbed and the quinoa is tender.

  4. In a large skillet, heat the olive oil over medium heat.

  5. Add the chopped onion, jalapeno pepper, and garlic. Cook until the onion is translucent and the garlic is fragrant.

  6. Add the cooked quinoa to the skillet and stir to combine with the onion mixture.

  7. Add the cumin, paprika, cayenne pepper, salt, and black pepper. Stir well to coat the quinoa with the spices.

  8. Cook for an additional 2-3 minutes, stirring occasionally.

  9. Remove from heat and garnish with chopped cilantro.

  10. Serve hot with lime wedges on the side.
