How To Make Clementine Curd

Ingredients
- 4-5 clementines
- 1/2 cup sugar
- 4 tbsp unsalted butter, cubed
- 3 eggs, beaten
Instructions

Zest and juice the clementines, set aside.

In a heatproof bowl, whisk together the sugar and eggs until well combined.

Place the bowl over a pot of simmering water, making sure the water doesn’t touch the bottom of the bowl.

Gradually whisk in the clementine juice and zest, followed by the butter.

Continue to whisk gently for about 15-20 minutes or until the mixture thickens and coats the back of a spoon.

Remove from heat and let cool before transferring to jars or airtight containers.

Refrigerate for at least 2 hours before serving.
