A refreshing salad packed with Mediterranean flavors of fresh vegetables, feta cheese and a sprinkle of oregano.

Ingredients

  • 2 large tomatoes, diced
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 2 tbsp red wine vinegar
  • 3 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine diced tomato, cucumber, onion, green and red bell pepper, and olives.

  2. Add crumbled feta cheese on top.

  3. In a small bowl, whisk together red wine vinegar, olive oil and dried oregano.

  4. Pour dressing over salad and toss gently to combine.

  5. Season with salt and black pepper to taste.

  6. Serve chilled.
