Ingredients
- 2 cups of corn kernels
- 1 cup of black beans, rinsed and drained
- 1 jalapeno pepper, seeded and diced
- 1/4 cup of red onion, diced
- 1/4 cup of fresh cilantro, chopped
- 1/4 cup of crumbled feta cheese
- Juice of 1 lime
- 2 tablespoons of olive oil
- 1/2 teaspoon of chili powder
- Salt and pepper to taste
Instructions

In a large skillet, heat the olive oil over medium heat. Add the corn kernels and cook for 3-4 minutes until lightly charred.

In a large mixing bowl, combine the cooked corn, black beans, jalapeno, red onion, cilantro, lime juice, chili powder, salt, and pepper. Mix well to combine.

Gently stir in the crumbled feta cheese.

Serve the salad chilled or at room temperature.
