Ingredients

  • 2 cups cooked chickpeas
  • 4 cups spinach leaves
  • 1/4 cup almond butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon honey
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: sliced almonds, chopped tomatoes, shredded carrots

Instructions

  1. In a large bowl, combine almond butter, soy sauce, lemon juice, olive oil, garlic, honey, cumin, salt, and black pepper. Whisk until well combined.

  2. Add cooked chickpeas to the bowl and toss until evenly coated with the dressing.

  3. Heat a skillet over medium heat and add the chickpeas. Cook for about 5 minutes, or until heated through.

  4. In the same skillet, add the spinach leaves and cook until wilted, about 2-3 minutes.

  5. Divide the spinach among 4 bowls and top with the chickpeas.

  6. Optional: Sprinkle with sliced almonds, chopped tomatoes, and shredded carrots for added flavor and texture.

  7. Serve immediately and enjoy!
