Serves:

Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 2 red peppers, diced
  • 4 eggs
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional toppings: fresh herbs, hot sauce

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add the diced red peppers and cook until they start to soften, about 5 minutes.

  3. Add the chickpeas to the skillet and sprinkle with smoked paprika, salt, and pepper. Cook for another 5 minutes, stirring occasionally.

  4. Make 4 wells in the chickpea mixture and crack an egg into each well. Season the eggs with salt and pepper.

  5. Cover the skillet and cook for about 5 minutes, or until the eggs are cooked to your liking.

  6. Sprinkle the feta cheese over the top of the hash.

  7. Serve hot, garnished with fresh herbs and/or hot sauce if desired.
