Ingredients
- 2 cans of chickpeas, rinsed and drained
- 2 roasted red peppers, sliced
- 1/2 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp cumin powder
- Salt and pepper to taste
Instructions

In a large bowl, combine the chickpeas, roasted red peppers, red onion, cherry tomatoes, parsley, feta cheese, and olives.

In a small bowl, whisk together the olive oil, lemon juice, cumin powder, salt, and pepper.

Pour the dressing over the salad and toss well to combine.
