Ingredients

  • 2 cans of chickpeas, rinsed and drained
  • 2 roasted red peppers, sliced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp cumin powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, roasted red peppers, red onion, cherry tomatoes, parsley, feta cheese, and olives.

  2. In a small bowl, whisk together the olive oil, lemon juice, cumin powder, salt, and pepper.

  3. Pour the dressing over the salad and toss well to combine.

  4. Serve chilled and enjoy!
