How To Make Charred Sweetcorn Salsa

Ingredients
- 2 ears of sweetcorn, husked
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1 jalapeno pepper, seeded and minced
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions

Preheat the grill to medium-high heat.

Place the sweetcorn on the grill and cook, turning occasionally, until charred and tender, about 10-12 minutes. Remove from the grill and let cool.

Once cooled, cut the kernels off the cob and transfer to a large bowl.

Add the diced red bell pepper, red onion, jalapeno pepper, lime juice, and chopped cilantro to the bowl. Stir well to combine.

Season with salt and pepper to taste. Adjust the lime juice and seasoning, if necessary.

Serve the charred sweetcorn salsa as a dip with tortilla chips or as a topping for grilled meats or fish.
