How To Make Bulgur and Lentil Stew Recipe

A hearty and healthy stew made with bulgur wheat and lentils.

Serves:

Ingredients

  • 1 cup of bulgur wheat
  • 1 cup of red lentils
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tomato, chopped
  • 1 carrot, chopped
  • 1 teaspoon of cumin powder
  • 1 teaspoon of paprika
  • 1 tablespoon of olive oil
  • 4 cups of vegetable broth or water
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a pot, heat olive oil over medium heat. Add onion, garlic, tomato, and carrot. Cook for about 5 minutes or until onion is translucent.

  2. Add cumin powder and paprika and stir well.

  3. Add bulgur wheat, red lentils, and vegetable broth or water. Bring to a boil.

  4. Reduce heat to low, cover, and let simmer for 20-25 minutes or until bulgur and lentils are cooked.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with fresh parsley.
