How To Make Red Lentil, Chickpea & Chilli Soup

Serves:

Ingredients

  • 1 cup red lentils
  • 1 cup canned chickpeas
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 chili pepper, chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, and chili pepper. Cook until softened, about 5 minutes.

  2. Add the carrot and celery to the pot, and cook for another 2 minutes.

  3. Add the lentils, chickpeas, vegetable broth, cumin, and paprika to the pot. Bring to a boil, then reduce heat and simmer for 25 minutes, until the lentils are cooked through.

  4. Season with salt and pepper to taste.

  5. Use an immersion blender to blend the soup to your desired consistency, or transfer to a blender and blend until smooth.

  6. Serve hot, garnished with fresh cilantro.
