  • 4 ripe peaches, peeled and pitted
  • 1/4 cup all-purpose flour
  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 1 vanilla bean, scraped
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Cut peaches into bite-sized pieces and place them in a small baking dish.

  3. In a medium bowl, mix together flour, rolled oats, brown sugar, butter, vanilla bean, and salt until crumbly.

  4. Sprinkle crumble mixture evenly over the peaches.

  5. Bake for 30-35 minutes, until the topping is golden brown and the peaches are cooked through.

  6. Serve warm with a scoop of vanilla ice cream.
