How To Make Mushroom, Spinach & Potato Pie

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 2 large potatoes, peeled and diced
- 1 cup vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 sheet of ready-made puff pastry
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 400°F (200°C).

In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent.

Add the sliced mushrooms to the pan and cook until they have released their moisture and become golden brown.

Stir in the fresh spinach and cook until wilted.

Add the diced potatoes, vegetable broth, dried thyme, salt, and pepper. Simmer for about 10 minutes, until the potatoes are cooked through and the liquid has reduced.

Transfer the filling to a pie dish and set aside.

Roll out the puff pastry sheet on a lightly floured surface to fit the size of the pie dish.

Place the puff pastry over the filling and press the edges to seal. Cut a few slits on top to allow steam to escape.

Brush the pastry with the beaten egg.

Bake for 25-30 minutes, or until the pastry is golden brown and flaky.

Allow the pie to cool for a few minutes before serving.
